Prawns In a Tomato Sauce

The great thing about cooking prawns is that they are easy and quick to cook. Raw prawns take a few minutes to cook, making them the perfect midweek meal when you need something special after a long day but want to save time in preparation. Add to that a fragrant spicy tomato sauce—what could be nicer than prawns in a tomato sauce?

I love prawns and always have a bag in the freezer. They give you so many options for delicious recipes that can be prepared quickly.

This recipe perfectly fits the easy and quick criteria. The tangy tomato sauce works so well with the prawns, and adding Tamarind to the spicy sauce gives it that slightly sour taste that offsets the spice. Tamarind is a much-used ingredient in Asian kitchens. You can buy tamarind paste in most supermarkets and Asian food shops. Once you have it, you will find you will be using it in various dishes.

If you cannot use fresh tomatoes, tinned chopped tomatoes will be fine, but if you can buy please stretch to a premium brand, the extra expense is well worth it in terms of the quality of the sauce.

Prawns in a tomato sauce

Prawns in a Tomato Sauce

Serves: 2 People
Cooking time: 10 minutes minutes
Level: Easy

Ingredients

  • 225g Raw King Prawns
  • 2 Garlic Cloves finely chopped
  • 400gr Fresh Tomatoes or good quality tinned Tomatoes
  • 2 Tbsp olive oil
  • Juice of half of lemon
  • 1 tsp of Chilli powder
  • 2 tsp of Tamarind paste
  • 1 tsp Tumeric powder
  • 1 tsp of salt

Instructions

Add the olive oil to a pan and add the finely sliced garlic until golden(try not to overcook the garlic)

Add tomatoes with lemon juice, salt, and sugar and cook for about 10 minutes.

Add the tomato, lemon, sugar & salt

Finally, add the chilli, turmeric, tamarind paste, and raw prawns and cook until the prawns are pink and cooked.

Add the prawns, spices and tamarind paste

Season with a bit of black pepper

Serve with a sprinkling of chopped coriander

Serve in a bowl and top with coriander

You can serve it with rice, pasta or simply with fresh bread
