The key to the Mayfair Chippy’s success is a combination of quality, consistency, and innovation. We focus on providing top-tier ingredients, prepared with attention to detail and served in a welcoming atmosphere. We’ve also found ways to adapt traditional British fish and chips into something unique, appealing to both locals and tourists. Our customer-centric approach has been crucial—ensuring that every dining experience is memorable.

2. It must have been a dream come true, but were you taken by surprise by the success of the Mayfair Chippy, with large queues forming every day?

While we were always hopeful about the success of the Mayfair Chippy, we have been pleasantly surprised by the consistent demand. The queues reflect the love people have for what we’ve created, and it’s incredibly humbling to see our concept resonate so well with the community. It’s a reminder of how powerful great food and exceptional service can be.

3. With the opening of your Knightsbridge location, what lessons have you learned from running the Mayfair restaurant that you applied to your new restaurant?

The key lesson has been the importance of building a strong team and maintaining the same high standards of service and quality across all locations. While each area has its own character, the core principles that made Mayfair successful—quality, consistency, and a focus on customer experience—are the foundation we’ve built the Knightsbridge location on. It’s also important to understand the local market and tweak the offering accordingly while staying true to your brand identity.

4. How important is it to have a unique concept, and what do you think makes a restaurant truly stand out?

A unique concept is vital in today’s crowded restaurant scene. It’s not just about serving great food, but also about creating an experience that people want to return to. For us, it’s about blending tradition with modernity in a way that feels both nostalgic and fresh. What makes a restaurant stand out is the ability to tell a story through its food, its atmosphere, and its connection to the community.

5. What qualities do you believe are essential in a successful restaurant team?

A successful restaurant team needs a blend of passion, dedication, and flexibility. Communication is key—everyone should understand the restaurant’s vision and their role in bringing it to life. There must be a strong work ethic and a focus on teamwork, as every person, from the chef to the front-of-house, plays an important role in delivering a great dining experience.

6. In your experience, how crucial is location when opening a new restaurant?

Location is undeniably important, but it’s not everything. A great location can give a restaurant an initial boost, but it’s the food and service that will keep customers coming back. That said, being in the right area can help you reach your target market and build your brand. The key is to choose a location where your concept will thrive and resonate with the people around you.

7. What do you think sets Mayfair apart from other areas in London regarding dining?

Mayfair is known for its exclusivity and sophisticated dining scene, making it the perfect backdrop for high-end cuisine and innovative concepts. The area attracts both international visitors and Londoners who appreciate exceptional quality and service. What sets Mayfair apart is its mix of luxury, history, and modernity, which creates a unique dining atmosphere that’s hard to replicate elsewhere in the city.

8. What are some of the challenges of operating a restaurant in an upscale area like Mayfair?

Operating in Mayfair does come with its challenges, particularly with high operating costs and the need to constantly meet the expectations of a discerning clientele. There’s a lot of pressure to maintain top-tier standards while managing costs, but it also drives innovation. The competition is fierce, so maintaining uniqueness and staying ahead of trends is crucial.

9. Can you share any personal favourite spots or hidden gems in Mayfair that you think visitors should check out?

Aside from the Mayfair Chippy, I recommend checking out the Royal Academy of Arts for a blend of culture and beauty. For a more relaxed experience, Green Park is a great place to unwind. There’s also a lovely little independent coffee shop, The Mayfair Coffee House, which has a welcoming vibe and great coffee.

10. What inspired you to open the Mayfair Chippy, and how has your vision for the restaurant changed over time?

The inspiration behind Mayfair Chippy was to create a modern twist on a British classic—fish and chips—that could stand out in a world where casual dining was evolving. Over time, our vision has expanded beyond just serving fish and chips to creating an environment where people can enjoy the best of British cuisine in a setting that’s stylish yet unpretentious. We’ve aimed to balance tradition with innovation, and that’s something that’s continued to grow as we’ve expanded.

11. What are your plans for the Mayfair Chippy brand? Do you have any more locations or new concepts in mind?

We’re always exploring opportunities for growth. The brand has so much potential, and while we’re not rushing, we are considering expanding into new areas. We’re also looking at how we can evolve the Mayfair Chippy concept by experimenting with new menu items and concepts that retain our core ethos but push the boundaries of what people expect from a traditional fish and chip shop.

12. How do you keep yourself and your team motivated in a high-pressure environment?

Staying motivated comes from a shared passion for what we do. We maintain a strong sense of camaraderie within the team, and we celebrate our successes, big or small. In a high-pressure environment, it’s about keeping the energy positive and focusing on the end goal—creating an outstanding experience for our customers. I try to lead by example and remind the team of the impact their work has on people’s day.

13. Finally, what does success look like for you personally and for the Mayfair Chippy in the next five years?

Success for me personally is about continuing to grow and learn while ensuring that the Mayfair Chippy brand stays true to its roots. For the restaurant, I see success as continuing to be recognised for quality and service while expanding thoughtfully and sustainably. In the next five years, we aim to be a staple in London’s dining scene, with more locations and a stronger connection to our community.
