A must-try cocktail for any Margarita lover, the Palomita is a delightful sparkling cocktail guaranteed to kick off the party.

Is a Palomita a Mexican cocktail?

Yes, it originates from Mexico. The Palomita cocktail is a variation of the Paloma, which is a traditional Mexican drink. The Paloma typically features tequila, grapefruit soda, lime juice, and sometimes a salt rim. The Palomita, on the other hand, often incorporates additional flavours or ingredients but retains the essence of the original Paloma. I was lucky enough to enjoy the version we are featuring at the opening of PIRAÑA London in St James, so much so that I requested the recipe which they were kind enough to send me . So our cocktail recipe today is a Palomita cocktail PIRAÑA style created by their special mixologists.

Before we move on to the cocktail, I feel I should give you some background information on PIRAÑA London as it is stunning.

PIRAÑA London is a new Nikkei restaurant offering entertainment, a restaurant and bar by day, and as the night progresses, transforms itself with DJ’s spinning tracks with dancing to 1 am. Nikkei cuisine is a fusion of Peruvian and Japanese flavours. Standout dishes include Grilled Lamb Chops, Anticucho, Grilled Poussin, and Hamachi Tiradito.

As I mentioned, PIRAÑA opened its doors this month, and as you can see from the pictures below, it is a stunning space designed for fun and enjoyment of its guests. I will look to bring you a detailed review of the food in time and I’ve popped details and a link to their websitie at the end of this article, let’s now move on to the cocktail that I was so taken with.

Ingredients

  • 40ml Volcan Blanco Tequila 
  • 10ml Ronda De Almas Mezcal 
  • 10ml Reisetbauer Karrott Eau de Vie
  • 10ml Supasawa Sour mixer 
  • 60ml Pink Grapefruit Soda
  • Mix over Ice
  • Garnish:
    • Grapefruit slice & Hawaiian Black Salt

Glassware: highball

I’m not familiar with some of the ingredients, and I assume they might be new to you as well. After doing some research, I found that all the ingredients can be purchased online. However, if you enjoy experimenting, you could also make your own version, as long as you use Tequila and grapefruit soda

 Ronda De Almas Mezcal. Mezcal is a Mexican spirit that is growing in popularity. I’m reliably informed that Ronda De Almas Mezcal contains notes of jalapeno peppers, chocolate fruit, and tobacco.

Reisetbauer Karrott Eau de Vie is a white spirit made from the humble carrot. It takes 35 kg of carrots to produce a single litre of this spirit. I have never heard of a carrot spirit and would like to taste it on its own.

Supasawa Sour is an intriguing mixer that bills itself as being an alternative to lemon and lime. 

If you are looking for something slightly different from the usual cocktail favourites, please give this a try. I think you might enjoy it, so if you are going to make it, you better mix up enough for a few glasses.
