It was a Friday night, and after my wife’s lunch out, our fridge was bare of anything I fancied. So, I popped down to our local Sainsbury’s for inspiration. I had my heart set on sausage and fennel pasta, a personal favourite, but the small store had no fennel on the shelves. Instead, I left with pork belly slices and pak choi, determined to create something delicious. Using store-cupboard staples like soy sauce, sweet chilli sauce, lime juice, and a surprising splash of Worcestershire sauce, I marinated the pork belly slices to craft an easy Chinese-style pork belly recipe served on pak choi over a bed of rice.

Often, impromptu dishes like this don’t quite hit the mark, but dear reader, this one was a triumph! This crispy, tender Chinese pork belly recipe is not only mouth-wateringly good but also quick, inexpensive, and made with everyday ingredients. How do I get the pork belly crispy?

Make sure the slices aren’t overlapping on the tray, and flip them halfway through cooking. The marinade caramelises beautifully — if you want extra crispiness, flash under the grill for the last 2-3 minutes.

Can I marinate overnight?

Yes — longer marinating means deeper flavour. Cover and refrigerate, then bring to room temperature for 15 minutes before cooking.

What else can I serve this with?

Ingredients

  • Pork Belly slices 6 slices 500g
  • 2 Tbls of Soy Sauce
  • 2 Tbsp of sweet chilli sauce
  • Juice of 1 lime
  • 1 Tbsp of Worcester sauce
  • Salt & pepper
  • Thumb sized piece of ginger grated
  • Pepper
  • 1 clove of Garlic
  • Pak Choi 250g
  • Splash of soy sauce for the cooking water

Instructions

 

Method for Chinese Pork Belly Slices Recipe

 

  1. In a bowl, combine sweet chilli sauce, soy sauce, Worcestershire sauce, grated ginger, lime juice, and minced garlic to create a flavourful store-cupboard marinade for your Chinese pork belly slices.
  2. Place the pork belly slices in the marinade, ensuring they’re fully coated. Marinate for at least 30 minutes, or longer for deeper flavour (refrigerate if marinating over an hour).Marinate the pork belly slicesPork belly slices
  3. Preheat your oven to 180°C (160°C fan). Slice the pak choi leaves in half lengthways.
  4. Arrange the marinated pork belly slices on a baking tray. Bake for 40–45 minutes, turning halfway, until crispy and golden.Pork belly slices cooked
  5. For the pak choi, boil, steam, or stir-fry for 4–5 minutes until tender. Add a splash of soy sauce and sesame oil before serving.Pak Choi in the pan with a splash of soy sauce
